1% of the product on the weight of the flour - Add to the flour before mixing. It stabilizes the result helping to strengthen the dough, increases volume, improves the structure of crumb. The bread with added fat must contain not less than 3% of total fats, referred to dry matter (DPR 502 of 30/11/98, Article 4). |
