CHARACTERISTICS
It reinforces the dough, protecting its gluten.

is not standard and stable.

1,5% of the product on the weight of the flour - The bread with added fat must contain not less than 3% of total fats, referred to dry matter (DPR 502 of 30/11/98, Article 4).
