1000 g LEVICHOUX 1300-1400 g Water - Mix hot water (45/50 °C) and LEVICHOUX in a planetary mixer equipped with a leaf for 8/10 minutes until the mixture is smooth and free from lumps. Leave to rest for at least 10 minutes then with a sac à poche fitted with a nozzle, dress on the tray. Indicative cooking temperatures 190/220 °C in plate ovens and at 170/190 °C in rotary fan ovens for 20/25/30 minutes according to the size of the cream puffs and the characteristics of your oven. Times and temperatures are indicative. |
